All turkeys at the Yelm Food Co-op are now on sale at a great price!

But quantities are limited..

Turkey in March?

Why now? With so many people staying at home with time on their hands, here’s our suggestion. Buy one of these free-range, GMO-free or organic turkeys and use your favorite turkey dinner recipe to start.

Then carve all the meat off the bones and use the carcass to make a yummy soup once again using your favorite recipe. A nice one is down below, if you need an idea.

With the meat you took off the bones and what you recover when you make the soup, start canning. Can the soup as well. You get one really nice meal at the beginning as a Thanksgiving celebration that your family is well – being Thankful doesn’t only have to be done in November! And you’ll get several more meals later from what you canned.

If you need some help with the canning, there are tons of recipes online and many videos on YouTube for you to follow.

Great Turkey Soup recipe

Ingredients

  • 1 leftover turkey carcass (from a 14-pound turkey)
  • 3 quarts water
  • 2 cans (14-1/2 ounces each) reduced-sodium chicken broth
  • 1/2 cup uncooked long-grain rice
  • 1 medium onion, finely chopped
  • 4 celery ribs, finely chopped
  • 2 medium carrots, grated
  • 1 bay leaf
  • Dash poultry seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • Salt, optional

Directions

In a stock pot, place turkey carcass, water and broth. Bring to a boil. Reduce heat; cover and simmer for 4-5 hours.

Remove carcass from stock. Remove any meat and dice. Return to stock along with rice, onion, celery, carrots, bay leaf and poultry seasoning. Add remaining seasonings to taste. Cover and simmer over medium-low heat until the rice is cooked. Discard bay leaf.

Nutrition Facts

1-2/3 cups: 147 calories, 2g fat (0 saturated fat), 28mg cholesterol, 412mg sodium, 15g carbohydrate (3g sugars, 1g fiber), 12g protein. Diabetic Exchanges: 1 starch, 1 lean meat.
