No gums, thickeners, stabilizers, artificial ingredients, or coloring agents are ever used in our half &amp; half.<br \/>\nOur organic half &amp; half begins with premium organic milk and cream, blended to achieve 11% butterfat content.<br \/>\nMany half &amp; half products are ultra-pasteurized to increase shelf life, which involves \u201ccooking\u201d the milk at high temperature (at or above 280\u00b0F for at least two seconds). These more heavily processed items forfeit flavor and nutritional integrity in their quest for a longer shelf life.<br \/>\nNever ultra-pasteurized. Straus Family Creamery Organic Half &amp; Half is pasteurized at 170\u00b0F for 18 seconds and lightly homogenized to emulsify the milk and cream (to minimize separation).
