All ingredients are available at the Yelm Food Co-op. This is what we do:<\/p>\n<p><u>Ingredients<\/u><\/p>\n<p>Organic Kale\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 bunch, washed and chopped<br \/>\nOrganic Carrots\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 2-3 medium size, peeled and chopped<br \/>\nOrganic Leek\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 large stalk, cleaned and chopped<br \/>\nOrganic Celeriac\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0I medium sized root, peeled and chopped<br \/>\nOrganic Potatoes\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 2 medium sized (omit if pairing with potato pancakes)<br \/>\nOrganic Parsnip\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 1 medium ( this adds extra sweetness to the soup)<br \/>\nOrganic Garlic\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a02 medium cloves, crushed<br \/>\nSeitenbacher Veggie<br \/>\nBouillon powder\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a02 Tsp, heaping<br \/>\nBetter than Bouillon<br \/>\nChicken\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 Tbsp.<br \/>\nOrganic Turmeric\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0\u00bd Tsp<br \/>\nGround Pepper\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0to taste<\/p>\n<p><u>Preparation<\/u><\/p>\n<p>Bring 5 cups of water to a boil while you are preparing the veggies. (This may vary depending on the quantity of veggies and the thickness you prefer.)<\/p>\n<p>If you prefer a thin soup with the veggies floating in it, cut the veggies in fine slices or small chunks. If you use an immersion blender like we do, just chunk everything up into pieces for now.<\/p>\n<p>When water is boiling, add bouillon and veggies and spices. Keep the water at a boil for the 1<sup>st<\/sup> 15 minutes and then reduce to a simmer for 30 minutes. Check for doneness.<\/p>\n<p>At this point you can use the immersion blender to make a thick soup mixture. Then let it cook at a simmer for another 15-20 minutes.<\/p>\n<p>Taste and adjust seasonings; add a splash of cream or sourcream. Serve hot with bread or with potato pancakes as in the following recipe.<\/p>\n<p><strong>German-style Potato Pancakes<\/strong><\/p>\n<p>I call them \u201cGerman-style\u201d because I learned this recipe from my beloved wife who is German J<\/p>\n<p>Portion for 2 people<\/p>\n<p><u>Ingredients<\/u><\/p>\n<p>Organic potatoes\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 \u00bd Lbs.<br \/>\nOrganic onion\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 1 medium sized<br \/>\nOrganic Flour\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a01-2 Tbsp.<br \/>\nSea Salt\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a01-2 Tsp. (to taste)<br \/>\nOrganic Eggs\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a01 large<\/p>\n<p><u>Preparation<\/u><\/p>\n<p>Using a food processor, remove the large chopping blade and insert the shredding blade disc. (Test this \u2013 the potatoes should come out in short shredded strips, not in a \u201cmush\u201d form.)<br \/>\nProcess the potatoes and the onions, put into a large mixing bowl. Crack the egg into the bowl, add the flour and salt and mix well.<\/p>\n<p>Heat your favorite cooking oil (we use palm oil shortening) in a skillet or 2 over medium heat. Put several forks full of the potato mixture in depending on the skillet size. Don\u2019t crowd them or they\u2019ll be hard to turn over.
