They are milder and sweeter than onions and can be\u00a0eaten cooked and\u00a0raw. Personally I love them sauteed as a base\u00a0for any stir fry\u00a0 and very thin sliced raw in salads. And who has not heard of Potato-Leek Soup?!????<\/div>\n<div>This\u00a0vegetable is rich in flavonoids, especially\u00a0one called kaempferol. Flavonoids are antioxidants and have anti-inflammatory properties. Leeks may\u00a0also have anti-cancer properties besides other\u00a0health benefits &#8211; the list is long&#8230;.<\/div>\n<div>Leeks are high in beta-carotene, which converts into vitamin A in the body, which can provide increased\u00a0protection from the sun and a lower risk of sunburn. Leeks are also a natural diuretic as they contain many sulfur compounds that help the liver gently cleanse the body. Digestion of this vegetable is slow due to their high fiber content which helps to regulate the blood sugar levels naturally.<\/div>\n<div>The fiber content in leek improves the microbiome in\u00a0our gut as it supplies soluble\u00a0fiber which acts as a prebiotic\u00a0to feed the beneficial bacteria. And leek contains allicin which is the famous ingredient in garlic. Among\u00a0 other things, allicin is a potent\u00a0antimicrobial that can help reduce pathogenic microbes in the\u00a0gut.
